This new line of knives from one of our favorite and most popular
manufacturers represents a wonderful balance of price, performance, and quality. The GS+ series is an update of the very popular GS line that we have been selling for several years. Improved metallurgy and manufacturing have resulted in a knife that is a definite step up from the original. Some of these upgrades include raising the HRC to 61-62, smoother grinds, better fit and finish, and the addition of those lovely new Khii chestnut octagonal handles.
Unlike the other knives currently available in this line, the kiritsuke featured here comes with a beautiful nashiji finish on the upper blade road. It looks so nice contrasted against the hairline lower portion and the fine handle. Visually this is a real stunner. But in this case, beauty is more than skin deep. The inner GS+ core steel is clad in a semi stainless steel using the san-mai style of awase. This makes for an easy to maintain blade while adding strength and shock protection to the core steel.
Unlike classic kiritsuke blades, this one is ground on both sides so that it is far easier to use and sharpen, while being practical for both left- and right-handed users. The grinds are, as always with Konosuke blades, impeccable. The fit and finish, as good as it gets. The shape makes for a very versatile knife that will find favor with many professional and serious home chefs.
