This 180mm gyuto checks every one of those boxes. Ginsan stainless steel forms the core, prized for taking a genuinely fine edge while remaining easy to sharpen and maintain - excellent edge stability and corrosion resistance without feeling brittle.

The nashiji finish gives the cladding a soft, pear-skin texture that pairs beautifully with the warm sakura cherry wood handle. Every knife in this line is hand engraved by our friend Akane-san, who also created the elegant calligraphy on the Yahiko box - a small detail that elevates the knife well beyond a simple tool. The even 50/50 grind delivers a neutral, predictable cutting feel for both right- and left-handed cooks.

I bought this knife because I wanted to sharpen a Ginsan knife. This one was the size of a knife I was replacing, looked pretty, wasn't crazy expensive, was in stock. I expected to like this knife.

I love this knife.

Food release is excellent. This is my go-to for potatoes now. Cutting geometry is excellent. Fit and finish are great. It looks better in person than it does in photos. It's light, thin, and wonderful!

Out of the box, it was sharper than a lot of knives I borrow to sharpen. I sharpened it better, but that's not a con at all. If you don't already sharpen your own knives, you probably don't need it sharper than it comes. If you DO sharpen your own knives, great! This one's really easy to sharpen!

I have not had it long enough to know how well it holds an edge, but I am over the moon with this knife. It is an absolute joy to use.
