If you have spent any time researching Japanese kitchen knives you have encountered the Tojiro DP. It is one of the most consistently recommended entry points into serious Japanese cutlery - thin behind the edge, hard enough to get and hold a genuinely sharp edge, and priced so that the performance-to-cost ratio embarrasses most of the competition. The CLASSIC line is the DP line - completely unchanged, name only updated at the request of the manufacturer. TOJIRO has been making these in Sanjo City, Niigata since 1955.
At 3.0 oz the CLASSIC Boning/Utility 150mm is the lightest knife in the lineup - an ultra-nimble blade for in-hand work, trimming, filleting, and fine detail tasks where weight and bulk are the enemy. Alex calls it an elegant scalpel - full tang laminated steel that arrives screaming sharp. Sawyer worked with colleagues who used this knife before buying his own - the collective experience of a whole kitchen confirmed the purchase. The 152mm blade and 30mm height give it a narrow, precise profile well suited to working around bones, trimming fat, and filleting fish where a wider knife would get in the way.
What Customers Are Saying: Twenty-six five-star reviews. Alex calls it an elegant scalpel - truly utilitarian and sharp right out of the box. Sawyer watched colleagues use it before buying - a whole kitchen worth of positive experience. Jenna loves Tojiro knives and is very happy to have this one. The recurring theme across 26 reviews is a knife that surprises buyers with its sharpness and lightness - at 3 oz it handles like nothing else in the line. Multiple professional cooks use it as their go-to trimming and boning tool. Outstanding value at the price for a full tang VG10 knife with this level of precision.
Care Instructions: VG10 is a fully stainless steel - low maintenance and resistant to corrosion. Hand wash and dry after each use. Avoid the dishwasher for best longevity. Do not use on bones, frozen foods, or hard crusts. Sharpen on quality water stones and hone regularly with a ceramic rod to maintain peak performance.

This is a near perfect petty. Great ootb sharpness but really shines when you put it on the stones. VG10 holds a great edge. I've had it for 5 years and use it almost daily for veg prep, and butchering. It's the only knife in my bag I've never thought about upgrading.

(Home cook) After doing much research, decided to make this my second knife purchase to pair with my 8 inch Chef's Knife. Very happy with my decision as this seems to work well both with veggie prep and also breaking down a chicken, cleaning up a skirt steak, etc.

Bought this knife based after reading many reviews. Takes and edge easily on a Wicked Edge Go. Edge retention and balance of this knife is excellent. A pleasure to use. I will buy Tojiro again in the future.

Very nice knife but not as sharp as I thought it would be out of the box. Able to sharpen up easily, though. Basic knife without some of the flair I would have liked. Thin blade easily bends so be careful not to cut when hard surfaces can be hit. Still getting to know its potential.

An excellent line of knives, suitable for the professional kitchen or eager amateur. Long lasting, sharp out of the box and easy to care for.The 150mm utility is a great small all rounder. I use mine for anything from prepping fruit to butchering and fish prep.

Very sharp out of the box, good fit & finish, and feels great in the hand. It's a gift so haven't put it through its paces myself, but I expect it will be an excellent performer.Mark's customer service on the purchase was top notch.

Not much to say except overall awesome value with this knife. And not to take away from how good it is regardless of price. this knife is a great general use petty/utility knife. the star here is the steel, vg-10 takes a crazy sharp edge, holds it well, and is easy to sharpen on top of all that. it is in that sweet spot for hardness, so you can even steel it on a something like an idahone or other ceramic hone and it will get back to hair-popping sharp in a swipe or two, if done correctly.fit and finish is okay - i hear some people have issues with quality control with tojiro knives. mine had a slight overgrind towards the heel. but it is a pretty easy fix and can honestly be overlooked for the price and value. especially considering how good everything else is. i would give it a 4.5 if i could, but ill just go with 5, since i think this is a great buy. oh, i also have the santoku and the petty in the DP line if that says anything about how much i love this line and the value you get with it. they are just great workhorses that you can rough up and use for hard tasks and not really think twice about it - the way a knife should be used.

My favorite knife on the line for almost a year. Quick and easy to sharpen. OOTB sharper than comparable priced and some higher priced knives. Not the most beautiful knife, but definitely a handy workhorse. Keeps its edge through station prep and service.ChefKnives to GO! Good and prompt service.Wish I had a wa handle tho

When i bought the knife i wasn't expecting much for the price point. The edge was sharp OTB but wasn't sharpened properly as their was a bump on the heel which i had to fix. The spine of the blade needed some sanding down too, edges were too sharp for my liking and mine came with some scratches on the spine. I havn't used it much as of yet, but I cant really complain for a knife of this price

Recently bought this utility knife. I use it everyday at work for hours at a time. Factory edge still sharp, honed it once since purchase. Wanting to see how far it'll go. Unsure at first, i picked this one just to have something to play around with. Definitely a must have, of the 3 other knives I bought here, this one is my favorite. She's sleek and light. Reliable to any ninja in the kitchen.

These knives are great. I just purchased this knife and also have a tojiro santoku which I use every day. Highly recommended for professional use. Great price. Maintains a beautiful edge. Sharpens easily on a wet stone and if you're using a steel it comes instantly back to life. Awesome if you work in a kitchen and need knives that can withstand constant use without losing their funtionality. Great knives.

A very sharp OOTB knife. Fit and finish are good. The 3 layers of steel show up well. I use it almost as much as my 8 chef knife. It's hard to beat this one for the price and quality.I like to cook and just recently decided to get some high quality knives. This Tojiro seems to be up there with some selling for much more.

I'm new to Japanese knives and was disappointed at how dull this knife was out of the box. It struggled to push through an apple and to pierce ripe tomato skin, things my cheap TJ Maxx knives did with ease when new.
