Hatsukokoro coordinates a wide network of blacksmiths and manufacturers out of Amagasaki, Japan, producing everything from entry level workhorses to serious high performance knives. This nakiri comes out of their Chromax line, a semi-stainless steel hardened to approximately 65 HRC that sharpens like a high carbon steel while shrugging off rust far better.

The nakiri is a flat profiled, straight edged vegetable knife, built for full board contact on push cuts. At approximately 175mm, its tall blade height gives generous knuckle clearance for repeated chopping. The blade is san mai, a Chromax core clad in stainless steel, finished in kasumi for a soft, satin surface, with a pale hinoki handle traditionally used in fine Japanese woodworking.

Care Instructions: Chromax is a semi-stainless steel, more resistant to rust than a fully reactive carbon steel, but the edge can still develop light staining or surface rust if left wet. Hand wash and dry the blade promptly after use. Avoid cutting frozen foods, bones, or other hard materials. Sharpen on quality water stones as needed.
