This gyuto is built san mai, a Chromax core clad in stainless steel, so the reactive part of the blade stays confined to a thin strip at the edge rather than spread across the whole face. Chromax itself comes from Takefu Special Steel, a semi-stainless alloy hardened to approximately 65 HRC for serious edge retention with far easier upkeep than a fully carbon blade.

The gyuto is the Japanese take on a Western chef knife, an all purpose shape for the broadest range of everyday prep. At approximately 215mm, this 210mm gyuto gives generous knuckle clearance and board coverage while staying nimble. The surface carries a kasumi finish, and the handle is hinoki, a pale, aromatic cypress prized in traditional Japanese woodworking.

Care Instructions: Chromax is a semi-stainless steel, more resistant to rust than a fully reactive carbon steel, but the edge can still develop light staining or surface rust if left wet. Hand wash and dry the blade promptly after use. Avoid cutting frozen foods, bones, or other hard materials. Sharpen on quality water stones as needed.
