The Sanpou workshop was established by Aoki Hamono, the company behind Sakai Takayuki, to preserve traditional Sakai knife making while developing the next generation of skilled craftspeople. Sanpou represents iron, fire, and water, the three treasures of Sakai blacksmithing. A logo incorporating these elements is imprinted on the blade as a mark of Sakai Takayuki craftsmanship.
This 150mm petty features a White #2 carbon steel core clad in stainless steel. White #2 is known for taking an exceptionally sharp edge while remaining easy to sharpen. The compact blade is well suited to trimming meat, portioning fruit, cutting smaller vegetables, and other jobs where a full-size chefs knife feels cumbersome. Its rustic kurouchi finish is paired with a semi-round olive wood handle suitable for either hand.
Care Instructions: The exposed White #2 steel along the cutting edge is reactive and will develop a patina with use. Hand wash and dry the knife promptly after each use. Do not place it in a dishwasher or leave it wet. Apply a light coating of protective oil before extended storage.
