TOJIRO has been making kitchen knives in Sanjo City, Niigata Prefecture since 1955, and the Origami series is one of their more unusual departures from the standard Japanese knife format. The name comes from origami, the traditional Japanese paper craft of folding a single sheet into a finished shape, and that is exactly how this knife is built. The blade and handle are formed from one continuous sheet of high carbon stainless steel, folded into its final shape with no welding anywhere in the construction.
That one piece build removes the weld points found on most knives, points that can weaken over time or collect food debris where a bolster meets a handle. The folded profile also gives the knife a distinct, angular look unlike anything else in a typical knife roll, a design distinctive enough to earn it an iF Design Award, one of the most recognized international product design awards.
As a santoku, it handles the everyday range of chopping, slicing, and mincing vegetables, fruit, and boneless proteins. At 165mm of blade and roughly 6 oz, the knife stays light and nimble in hand, and the double bevel edge is ground for straightforward, even sharpening.
