What Is White #2 Steel?
White #2, also written Shirogami #2 or White Paper #2, is one of the most widely used reactive carbon steels in Japanese knife making. Among blacksmiths and sharpening enthusiasts it has a reputation as one of the purest, most forgiving carbon steels made for kitchen knives, prized for a clean, responsive sharpening feel and the ability to take an extremely keen edge with minimal effort. Where White #2 Comes From
Shirogami translates to white paper steel, a name left over from the white paper wrapping Hitachi historically used to identify this grade leaving the mill. The white paper family sits below the blue paper family, or Aogami, because Shirogami leaves out the tungsten and chromium that Aogami adds to the base recipe. That simplicity is the whole point. Fewer alloying elements means a finer, purer grain structure, which is exactly what gives White #2 its famously easy, responsive feel on the stones. White #2 sits below White #1 within its own family, with a slightly lower carbon content that trades a small amount of edge retention for an even more forgiving sharpening experience, which is why it is often the steel recommended to cooks trying reactive carbon steel for the first time.
White #2 Chemical Composition
White #2 is about as close to a pure iron and carbon alloy as a kitchen knife steel gets. Carbon content runs roughly 1.05 to 1.15 percent, with small amounts of manganese and silicon rounding out the recipe and essentially nothing else added. That lack of alloying elements is what separates it from White #1, which carries a slightly higher carbon content in the 1.20 to 1.30 percent range, and from the Aogami family, which builds on this same base steel by adding tungsten and chromium, or tungsten, chromium, vanadium, and molybdenum in the case of Aogami Super. Less carbon and no added alloying elements means a softer maximum hardness ceiling than those other grades, but it also means a finer grain structure that sharpens up quickly and predictably, without fighting the stone the way a more heavily alloyed steel can.
How White #2 Performs in the Kitchen
The headline benefit of White #2 is sharpening feel. A well heat treated White #2 blade takes an extremely keen edge with less effort than almost any other kitchen knife steel, and the feedback on the stones is often described as satisfying and responsive rather than demanding. Typical hardness lands around 60 to 61 HRC, which keeps the steel tough and easy to touch up, though it will not hold an edge as long between sharpenings as White #1 or the Aogami grades. For a cook who sharpens often and enjoys the process, that is not a downside so much as a fair trade for how easy the steel is to bring back to a working edge. The tradeoff is the same one every reactive carbon steel makes: White #2 will develop a patina with use, needs to be dried immediately after contact with water or acidic foods, and is more prone to rust if left wet than a stainless steel. None of that is unique to White #2. It is simply the standard carbon steel bargain, applied to the most forgiving steel in the Hitachi paper steel lineup.
White #2 vs White #1 and Blue Steel (Aogami)
Within the white paper family, White #2 is the more forgiving of the two grades, while White #1 carries a bit more carbon for slightly better edge retention at the cost of being a touch less forgiving to sharpen. Neither steel holds an edge as long as the Aogami family, which adds tungsten and chromium, and in the case of Aogami Super, vanadium and molybdenum as well, specifically to extend edge retention beyond what a paper steel can do. That extra alloying content comes with a real tradeoff of its own: Aogami steels generally demand a bit more from the sharpener and take a slightly different feel on the stones than the very pure, very responsive feedback White #2 gives. Choosing between them usually comes down to how much time a cook wants to spend at the stones versus how long they want the edge to last between sharpenings. Cooks new to reactive steel, or anyone who wants the purest possible sharpening experience, tend to gravitate toward White #2 first.
Clad Construction and Stainless Clad Options
Because the reactive core of a White #2 blade is thin and comparatively soft next to the more heavily alloyed steels, most makers clad it between softer outer layers rather than forging the entire blade from a single billet. A kurouchi finish leaves that outer cladding in its dark, as forged state, a kasumi or nashiji finish gives the cladding a matte or textured look, and a polished or damascus clad blade exposes a visible pattern where the two steels meet. Some makers now offer White #2 clad in stainless steel rather than soft iron, which keeps the pure carbon core at the edge while cutting down on the maintenance the sides of the blade require. A fully stainless clad White #2 knife still needs the same care at the actual cutting edge, since that thin strip of exposed carbon steel is where the reactive properties live, but the sides of the blade resist spotting and rust far better than a traditional kurouchi or kasumi finish.
Caring for a White #2 Blade
White #2 follows the same care routine as any other reactive carbon steel. Hand wash and dry the blade immediately after use rather than leaving it wet in a sink or dish rack. Avoid letting the edge sit against acidic ingredients like citrus, tomato, or onion for extended periods, since that is when a reactive edge is most likely to spot. A light coat of camellia oil is worth applying before longer term storage. Because White #2 sharpens so easily, it also rewards a quick trip to the stones at the first sign of dullness rather than waiting, which keeps the edge in top form without ever requiring a heavy repair sharpening.
