What Is Aogami Super Steel?
Aogami Super, also written Aogami Super Steel or Blue Super Steel, is the highest performance member of the Hitachi blue paper steel family. Among Japanese blacksmiths and sharpening enthusiasts it has a reputation as one of the finest carbon steels made for kitchen knives, prized for the combination of extreme hardness, long edge retention, and a sharpening feel that stays forgiving even at that hardness. Where Aogami Super Comes From

What separates Aogami Super from Aogami #1 and Aogami #2 comes down to a handful of alloying elements, each doing specific work. Carbon content runs higher than in standard Aogami, which is the main driver behind the steel reaching a hardness range of roughly 64 to 66 HRC in the hands of a skilled blacksmith. Tungsten improves wear resistance and helps the edge hold its shape under repeated use. Chromium adds a small amount of hardenability and a touch of corrosion resistance, though Aogami Super remains a reactive carbon steel, not a stainless one. Molybdenum contributes toughness, helping offset some of the brittleness that can come with very high hardness. Vanadium refines the grain structure during heat treatment, which is a large part of why Aogami Super can reach such extreme hardness while still taking a genuinely keen edge rather than a brittle one.
How Aogami Super Performs in the Kitchen
The headline benefit of Aogami Super is edge retention. At 64 to 66 HRC, a well heat treated Aogami Super blade holds a working edge through far more cutting board time than a stainless knife in the VG-10 or Ginsan range, and noticeably longer than standard Aogami #1 or #2. The steel also has a reputation among sharpening enthusiasts for being easier to work with on water stones than its hardness would suggest, since the fine grain structure responds well to a good sharpening progression instead of fighting the stone. The tradeoff is the same tradeoff every reactive carbon steel makes: Aogami Super will develop a patina with use, needs to be dried immediately after contact with water or acidic foods, and is more prone to chipping than a softer stainless steel if it is twisted in the cut or used against bone. None of that is unique to Aogami Super. It is simply the standard carbon steel bargain, taken to its highest performing extreme.
Aogami Super vs Aogami #1, Aogami #2, and Shirogami
Within the blue paper family, Aogami #2 is the entry point, Aogami #1 sits in the middle with higher carbon and slightly better edge retention, and Aogami Super sits at the top with the additional vanadium and molybdenum described above. Compared side by side, the difference between the three is mostly about how long the edge lasts and how demanding the steel is to forge and heat treat well, not about how sharp any of them can get in skilled hands. Shirogami, or white paper steel, is a different branch of the same Hitachi steel family. White steel uses fewer alloying elements than Aogami, which many blacksmiths and sharpeners feel gives it an even purer, slightly easier sharpening feel, at the cost of shorter edge retention than any of the Aogami grades. Choosing between them usually comes down to how much time a cook wants to spend at the stones versus how long they want the edge to last between sharpenings.
Clad Construction and Stainless Clad Options
Because the reactive core of an Aogami Super blade is both hard and comparatively thin at the edge, most makers clad it between softer outer layers rather than forging the entire blade from a single billet of Aogami Super. A kurouchi finish leaves that outer cladding in its dark, as forged state, while a polished or damascus clad blade exposes a visible pattern where the two steels meet. Some makers now offer Aogami Super clad in stainless steel rather than soft iron, which keeps the cutting performance of the carbon core while cutting down on the maintenance the exposed sides of the blade require. A fully stainless clad Aogami Super knife still needs the same care at the actual cutting edge, since that thin strip of exposed carbon steel is where the reactive properties live, but the sides of the blade resist spotting and rust far better than a traditional kurouchi or migaki finish.
Caring for an Aogami Super Blade
Aogami Super follows the same care routine as any other high performance carbon steel. Hand wash and dry the blade immediately after use rather than leaving it wet in a sink or dish rack. Avoid letting the edge sit against acidic ingredients like citrus, tomato, or onion for extended periods, since that is when a reactive edge is most likely to spot. A light coat of camellia oil is worth applying before longer term storage. Because the steel reaches such high hardness, it also rewards regular stropping between full sharpenings far more than a softer steel does, which keeps the edge aligned without needing to return to the stones as often.
