Care Instructions: Aogami Super is a reactive carbon steel and the soft iron cladding is also reactive - both the edge and the cladding will patina naturally with use. The kurouchi (black as-forged) finish on the cladding provides initial protection and the patina that develops adds further protection over time. Wipe and dry the blade immediately after every use. Avoid leaving acidic foods on the blade. Hand wash only, never dishwasher. Apply camellia oil for long-term storage. Sharpen on quality water stones - Aogami Super at 64-65 HRC rewards careful technique and responds beautifully to stropping. Keep away from bones and frozen foods.

  My first Japanese knife

I'm just a home cook but I love having good sharp knives. After doing some research I knew I wanted a knife made of Aogami Super. I also wanted a knife without stainless cladding as I like a knife with the patina look. After using this knife for about 8 months it is the best knife I've ever used. I keep all my knives very sharp. This one is sharper and holds an edge longer than any knife I currently own. It is slightly forward heavy, which I like as I think it helps cut through harder vegetables with less effort.

This is my second knife from CNTG. I am extremely happy with the purchase. It is a dream to work with and cuts through vegetables with no effort at all. It will be a knife I use and treasure for the rest of my life. I am an avid home cook, not a professional chef, but this would be a solid pick for anyone who appreciates a quality knife in the kitchen.

This is an amazing blade. This is my first foray into artisan Japanese knives and felt like a family with a 700+ year history is a good bet. Knife really feels alive in the hand, like it has its own spirit. It's my first experience with Aogami super and I am very impressed...Moritaka's are probably best value you can get with this premium steel. I've had it over a month and with regular use, I haven't noticed any significant change to sharpness with just regular stropping. Also less reactive than I was expecting, but I'm also pretty good with keeping the knife dry and away from acid. I find the buffalo horn ferrule to be a significant upgrade to a standard pakka wood that you get with a lot of other makers... just feels more luxurious to the touch - especially in a pinch grip. One thing to note is that this blade does have quite a pronounced "hard stop" at the end of the rocking motion. This was made quite clear in the review video but I didn't fully realize it until I started using it. If you are more of a smooth fluid rocker you might want to reconsider. I have this blade and an Anryu blade that has a much more fluid rocking profile and switch between them depending on mood. Overall, just fantastic. CKTG customer service is A++

Everything I thought it would be, love the look and functionality. Sharpening service was awesome to get the edge were I wanted it and with just a little maintenance it has stayed super sharp. Getting the Petty next!

This knife is a functional work of art. Impressive in all ways. Enough said. CKTG is who deserves the highest praise in regard to down-to-earth customer care and service. I saved up my money and purchased this beautiful knife for my wife as a Christmas gift only to have the package stolen off my front porch following delivery. It's sad to know that a dishonest thief is walking around with such an incredible product of handmade care and love, and I truly feel for the thief as such a negative act will undoubtedly result in bad karma for this poor person. I immediately notified CKTG and was promptly contacted by an extremely nice woman named Susan who worked diligently to resolve the situation. Unfortunately we were unable to located the package and confirmed that it was indeed stolen. Susan compassionately offered to send another one at no charge, and I cannot thank her enough. It is apparent that CKTG is a company that prides themselves in providing quality products to people that appreciate Old World craftsmanship and attention to detail, and I truly believe this carries over into the business itself. I'll start by stating this is a review for cooks. Folks working in the food industry day in and day out. I've been working in the industry for 9 years and am currently working as a sous in an upscale bistro (Not trying to brag, just want to offer some perspective). I purchased this knife about two months ago and am incredibly happy with it. It's not only a work of art but it performs even better than it looks. It is perfectly balanced, separates ingredients like a dream, and takes a wicked edge on a set of stones with little to no effort. With that being said, I do feel it important to state: THIS KNIFE IS NOT BOMB PROOF. A lot of the comments on here, and even the description make it sound like this knife will handle anything you throw a it. This is not true.Overall I certainly will not deny, this is a very durable blade, and with proper care, I am certain I will last a lifetime. However, it has a super thin edge that will not handle anything more than hard cheeses. Even these you should be very careful with. The knife itself comes with a packet warning you not to use it on frozen foods, or items such as butternut squash. One evening before service I had taken this knife to a whole salmon, during which I put it through a couple pin bones. I was discouraged to discover that even this was enough to chip the edge in several spots. I'll admit some of this disappointment was due to my ignorance, but I do feel a portion of it was also due to misleading reviews and descriptions. This knife will not be your universal tool or work horse and replace most other knives. You'll still need a beater for your dirty work, and for harder/tougher items.With that being said, please do not let this review discourage you from purchasing this knife, or others of the same brand. Even after chipping it, I was able to take it to a diamond stone, remove the chips, and take it to some finer stones for an edge you wouldn't believe. This is not only an instrument of precision and beauty, this is a piece of history. Just make sure you do your homework and understand everything that goes into caring for a knife such as this. I know I didn't. P.S. Mark and the rest of the crew at CKTG are par none. You can rest assured that in purchasing this knife, as well as anything else from this site, you will receive the best customer service out there and then some. If you have any questions, or even special requests, don't be afraid to reach out to them and ask.

i been using this knife for more thank 6 months i havent its wow like amazong knife the latina the sharpness it get on the stone its really amazing love it, i own two moritaka this one 240 and a 210 and wow its just amazing knife scary sharp

TThis is an awesome knife, I have been putting it through its paces in a pro kitchen and it keeps up with anything I put in front of it. The edge retention is other worldly and the distal taper is on point. It is a light knife but has some blade forward weight. That combined with the profile make it an amazing chopper. The KU finish on mine is holding up fine. I'm starting to get a few faded spots but I've been using it for almost 2 months now. I love this knife.

I didn't know if this knife was going to be worth it and 230 dollars is a lot to sell out but just like a craftsman your tool need to be the right one for the job. This is the right knife for most jobs, I say this because it is reactive but I have not noticed to much of a problem. I say this knife is worth every penny you can spend on it! It was sharp when I got it but I wanted to make it razor sharp so I had to put it on the stone for a while but it came out very well. I can say more good things but you probably already get the point. A must have! I am going to get the 270 mm next check.

This is the first Japanese knife that I have ever purchased. I've been using Wusthoff Ikon knives for years, which are great and durable but not nearly as effective as this Gyuto. It also looks super cool!

Nice packaging with leaflet about the history about Moritaka. OOTB the blade was impressively sharp. Agree that the knife feels solid yet nimble. The kurouchi finish is lovely. Textured and almost silken but does not suffer from food sticking. Really impressed with grind on this. Very well made with a great finish

Really nice package, the knife is really sharp. When I did the flowing test with the paper, this knife performed really well. However, I do need to point out some miner issue. First, I have to say the Aogami Super Steel is super good, but I found a little rust spot on the blade. Note that it is really normal. Please make sure that you buy the oil to protect the knife ASAP. Overall quality is unbelievable.

The spine thickness is a bit too thin for this length. I've bought a Moritaka Nakiri 165mm before and I love it with its beautiful rosewood handle.

I am extremely please with this purchase. I have been putting off buying another chef's knife for quite a while and spent a long time deciding which one to buy. This knife is very sharp out of the box. The handle is even nicer than it appears on the webpage. It has a little more weight to it than my other Japanese knives, which I like. The balance point is exactly at the pinch grip point. Helpful and super fast, personable service from the team at CKTG. Ordered late Wednesday night, shipped Thursday and was delivered from WI to TX on Friday before noon! Great knife and fantastic company. This knife is absolutely worth the money.

After using this knife for almost nine months I find it a real workhorse and a pleasure to use. The steel is almost magical. It holds an incredible keen, and durable, edge. I had some chips that were probably my fault but when I starting sharpening they went away very rapidly. How is that possible? I thought that the steel would be very hard to sharpen since it held such a great edge ?.not so! Usually hard steel is hard to sharpen. I love this knife!

This is a truly impressive knife. After many hours of research, I went with the Moritaka gyuto and I can hardly say anything negative about it. The blade geometry is excellent and the knife is balanced right where my thumb and pointer pinch the blade, making all all kinds of cutting projects feel easy and natural. The knife seriously feels like an extension of my hand. The cutting edge was very sharp right out of the box, but I spent twenty minutes on the stone with it and took it to the next level. That was about a month ago and I haven't had to sharpen again, and I use that knife in a professional kitchen 5 days a week. I just steel it when I come in in the morning and when I get off, and it keeps laser sharp.And gosh, this knife is pretty as a picture.The only trouble I have had is a finicky kurouchi. Slicing baby green plantains took off an unfortunate amount of the black finish, and a few other items have caused similar problems - granny smith apples and lotus root off the top of my head. I think it is rigid high acid foods that do it. So now, my kurouchi has a distinct streak pattern in the middle. But everything else about the knife has been so wonderful, I can't bring myself to take off a star. The octagon handle looks and feels great, the knife is lightweight, nimble, well balanced, and incredibly sharp, and the other sous chef in kitchen reminds me almost daily how jealous he is of my Moritaka knives.And the service and shipping were impeccable. Bravo.

My second Moritaka and I love it just as much as my other. This thing takes a beating and keep on coming back for seconds. Even with a 15-20k polish on a natural stone the edge will still last a good while. It sharpens with ease and the edge holding is out of this world. Only draw back if the handle for a right handed person but for the steel it's easily over looked. And the usual great service from Mark.

This was my first purchase from CKTG.com and so far it has been great. This knife is awesome! I have used it daily for the last few weeks and there has been nothing it has not sailed through: honeydew melon, onions, carrots, celery, and squash all are sliced, diced, and minced with ease. I have never owned a knife that was this sharp before and has maintained its sharpness for so long. The finish is spectacular and must be seen in person to truly appreciate it. Anyone who is looking for a trusty blade can stop with this knife, it is sharp, durable, and beautiful. A true gem in any collection.

I've been using this knife for about 2 weeks now, and what can I say, this knife is a beauty. Edges are still razor-sharp and cuts everything like butter. The Kurouchi finish is much smoother than the Tanakas I have and the water-resistant rosewood handle is one of the best I've seen. My friends tell me I'm obsessed and I think that summarizes my experience very well.

I had the oppurtunity to use this knife for week and thought I would share my impressions of it.Out of the box the edge was pretty sharp and would shave hair. However, I am a little off center so of course I sharpened it up to a 10k edge. A couple of notes this is Aogami Super steel and takes an edge really nicely so it isn't a total pain to sharpen and a knife of this style (rustic) is not flawless and does have some imperfections. I think the rewards of how sharp and how wicked they look make up for the short falls ever so small that they are to me. I did need (rather wanted )to flatten the bevels just because I am compulsive that way and so I started with the fron side and went to grinding it didnt go too bad I have worked on much more diffacult knives for sure. So I guess long story short the knife is worth the moeny and effort but this is not a pristine show piece and is a knife that is built to be used and will reward you for such treatment !

This is an EXCELLENT knife. It comes sharp out of the box and cuts with no friction or wedging of the blade. The edge retention is great, and it takes an edge well. No complaints on this knife at all. Also the customer service through ChefknivestoGo is second to none.
