Aogami Super is steel prized for its wear resistance, ease of sharpening, and ability to achieve exceptional levels of hardness and, by extension, very refined and acute edges. This steel is found at the core of the Moritaka Supreme 165mm nakiri and is heat-treated to achieve a Rockwell Hardness rating of 64-65, which we find to be an excellent hardness for AS. The core steel is clad in soft iron and rendered with a kurouchi finish, which provides a beautiful rustic aesthetic to the blade.

This is my second Japanese kitchen knife. My first was a Yamashin Blue #2 Santoku. I enjoy both very much, but this Nakiri is different. It is lighter and smaller than I expected, nimbler, reminiscent of a straight razor. I believe I could shave with it. Everything cuts so easily. And the smoothness of the cuts can be felt with the tongue when you eat a slice of the carrot you cut with this knife. The carrot feels like plastic until you bite into it; then you taste everything. What an incredible knife, especially for the price!

Wicked sharp ootb. Watch your fingers. This steel is no joke. I've played around with blue 2 and white 2 in addition to the aogami super. Nothing performs quite like it. It?s easier to sharpen than people say. I think it?s more reactive than I?d hoped initially, so she?s no line knife, but she?s a prep workhorse. The one downside of this knife is the kurouchi finish. It?s beautiful, but it wears off really quickly. It doesn't really matter though, it just means you need to pay more attention to keeping it clean.

I've had this knife about two months. Holds an edge like nobody's business, and it is really easy to maintain. Out of the box it's sharp enough to shave hairs, and after a couple of days working on the line, a few passes at a 3000-4000 grit stone will get you back to where you wanted to be.In my professional opinion, this is not a commercial kitchen knife, nor should it be considered for an introduction into carbon steel. The price point is there, however, it's understated from many sources how delicate a kurouchi finish actually is. Beyond that, the face of the blade that is still Aogami Super is much more reactive than I anticipated and I haven't even used this knife on anything acidic.That being said, the performance you can receive out of this knife is probably almost unmatched for the price. It is truly a remarkable step up.Big thanks to CKTG. Super fast delivery.

This is my first knife from CKTG. I decided on the Moritaka after talking with Mark and others on the CKTG Forum. Excellent place to go for any questions you may have. I had excellent sales and service from Mark and CKTG. Knife arrived quickly and well packaged. F&F were very good. Very Sharp OOB.
