Mr. Hinoura’s Tamashii line of kitchen knives features a kurouchi finish with stainless steel cladding over a reactive carbon core. The steel used is White Paper #2 or Shirogami 2, which is hardened to 62 HRC. This is a hard wearing carbon steel which is clad using the san-mai method. The outer layer is a softer stainless steel, perfect for protecting and strengthening the core. The stainless steel cladding is given a great looking hammered kurouchi finish. While Shirogami #2 is reactive and will patina with normal use, the stainless steel will completely minimize upkeep.

This is a short gyuto, coming in at about 204mm in edge length. Blade height at the heel is a scant 40mm. So this knife could just as accurately be called a long petty as much as a short gyuto. It will find favor with many users and be able to tackle many different ingredients. The long slim blade would work as a small slicer, a standard short gyuto, or an herb and small produce chopper, especially where work space is an issue or the surface area of the object being cut does not require a very long edge.

The beautifully made Khii ebony octagonal handle is a perfect match to this blade. It has been installed in the traditional manner (or Tokyo style) in which the machi (gap) is exposed.
