The Sentan cleaver takes the brand into new territory: its first cai dao-style vegetable cleaver and its first knife in White 2 carbon steel rather than the SLD semi-stainless most of the Sentan lineup is built around. Sentan, meaning tip or leading edge, has always been about delivering real performance at an accessible price, and White 2 is a natural fit for that goal, a reactive carbon steel prized for taking an extremely fine, easy-to-sharpen edge at HRC 60.
The blade is hammer-forged and clad in stainless steel with a nashiji finish, so the reactive White 2 core is protected on both faces while only the edge itself stays exposed carbon steel. At 92mm tall at the base and 95mm at the middle, the blade has the height a Chinese cleaver needs for scooping and transferring food, and the rounded spine and choil keep the top of the blade comfortable through long prep sessions. The western handle uses a two-rivet construction for a solid, familiar grip.
