The Kanehide Bessaku Honesuki 150mm is made from a semi-stainless steel using a mono steel construction. It is the same steel that is used in the ever popular Kikuichi TKC line of blades. The honesuki pictured here is specifically designed for processing poultry, but many use the knife for other tasks as well.

Many honesuki knives are single bevel designs, reflecting their Japanese heritage. But many are now being made with a two-sided edge, as is this example. A side effect of this double bevel is that the knife becomes more of a general purpose petty style knife. The shape and weight allow for easy and secure in-hand work as well as being a great blade for creating garnishes.

Another unique aspect of this knife is that it's ground asymmetrically for better performance from the spine to the edge. Please make sure you specify the way you wish the knife to be biased when ordering. You can see the options in the drop down box.

The overall fit and finish of the blade and handle are a revelation given their keen pricing. The rosewood handle in particular is wonderfully conceived and finished.

If you are looking for a blade that will not break the bank, while allowing you entry into a specialized area of kitchen cutlery, we cannot recommend the Kanehide Bessaku Honesuki 150mm highly enough!

Ok, i've processed a few hundred pounds of everything with this knife. Chicken, pork picnic shanks, you name it. this knife is a total beast. No, not a chef, don't work in a kitchen but i do process raw food for my pup and obviously cook for myself. i reach for this knife time and time again. do note, it does tend to walk on you when you cut since its a single bevel but you can adjust. razor sharp and holds the edge for a long time.

Sharp, durable and small enough for chickens and other smaller fabrication.

This knife is awesome. I originally bought a right handed honesuki and thought I could work around it. No such luck. I love this knife. It's super sharp and it's a great price point for southpaw chefs like myself.

Reasonably priced Japanese style single bevel knife (my first). Very sharp! Well balanced. The handle is more Western style, but works well and is easy to clean.

I really like this knife for fabrication. I feel like I could use it for slicing also but I really like breaking down chickens with it and it's super sharp.

Sharp, nice handle and works well. I'm very glad I got the left-handed version as opposed to a Honesuki with a 50/50 blade. There are def. advantages with this knife.
