Makoto Kurosaki and his younger brother, Yu, have been making blades under the tutelage of their famous mentor, Hiroshi Kato. Makoto still works for Kato-san while also sharing time with his brother in the new shop he has established in Echizen. His goal is to establish himself as an independent blacksmith and it's our pleasure to help get his knives out to the public.
He has made this line of knives from the very popular Hitachi steel, White #2. AKA Shirogami #2 steel, it is one of the most popular steels in the kitchen knife world. White #2 is known for taking a really fine edge as well as its ability to reach good harness levels while not becoming brittle. The inner core, or hagane, is clad using the san-mai method of covering each side of the jigane but not wrapping over the spine. The cladding is stainless steel with a kurouchi, or blacksmith, finish.
What we really like about these great new knives is the superb grinds. They really are as good as we have seen in blades costing far more than these. These knives are real cutters and we think you will be impressed when you use them.
