A good mandoline earns its keep the moment there is a big batch of vegetables to get through, and this Quirelois slicer is built for exactly that kind of volume work. It handles everything from a quick batch of pickles to a full case of prep, with an adjustable thickness dial and two interchangeable tooth sets so switching between a fine and a coarse julienne takes seconds rather than a full blade change.
The finger guard is the detail that actually gets used: it stores right in the base of the unit, so it stays with the slicer instead of getting lost in a drawer. Between the wide cutting surface and the range of cut widths, this is a practical everyday tool for repetitive prep work, whether that means a home cook working through a big batch or a line cook facing a long prep list.
Care Instructions: Hand wash and dry thoroughly after use, paying close attention to the blade and finger guard. Do not place in the dishwasher. Store fully dry to prevent rust on the cutting surface, and always use the finger guard when slicing.Brand: Quirelois

When I started buying knives from CKTG (a few years back now) I stopped using my mandoline because I wanted to master cutting a fine julienne with a knife. Most chefs know that the julienne is the cut that also produces dices of various sizes and the brunoise.
Well after several years and hundreds of 1/9 pans of carrot julienne I can safely say that I have mastered that cut. So I have started using a mandoline again.
My French mandoline (Bron) is 35 years old. I used it this morning to make a pan of scalloped potatoes. It still has some utility, but the blades are starting to dull. I have had several Benriner mandolines (both sizes). Those are great when you use the flat blade, but using the comb blades is a pain. I still have unopened comb blades in my toolbox.
So I was intrigued when I made my daily scan on the site and immediately purchased one. My first impression is very positive. The combs are easy to remove and change, and the sizes provided are more than adequate for most of the cut that anyone would need. And the guard is actually functional, and has a very handy place underneath for storage. I like the hook that attaches to a bowl or pan for leverage. And the website is loaded with information on usage and care.
For the price it is worth buying another just for the spare blades. I think the magenta is cool and stands out, but I want a black one; it looks bad ass.
As usual, swift shipping. Another CKTG gem.
