All Shiro Kamo Knives

Shiro Kamo received the Dento-Kogei-shi title - master of traditional crafts, awarded by the Japanese Ministry of Economy, Trade and Industry - at 47 years old, making him one of the youngest recipients in the history of the designation. He works at Takefu Village, the cooperative workshop in Echizen where some of the finest hand-forged kitchen knives in Japan are produced, with a small crew of two workmen. Everything stays in-house. That combination - formal recognition of mastery, cooperative context, and tight production control - produces knives with a consistency and quality that is immediately apparent to anyone who has handled a few of them.

Kamo-san keeps all production in-house at Takefu Village and works across a wider range of steels than most blacksmiths his age choose to tackle. His SG2 Damascus line is his best seller - thin, hard, visually striking, and approachable for cooks who want high performance without carbon steel maintenance. His Aogami Super line pushes the edge quality further for cooks who are comfortable sharpening and want the finest edge possible. His Blue #2 lines - both the migaki (polished) and Yoru (kurouchi) finishes - sit in a middle ground that rewards good technique without demanding it. His White #2 Damascus line is the entry point into his carbon steel work - reactive, responsive, and deeply rewarding once a patina sets in.

Syungo Ogata trained under Kamo-san for seven years before striking out independently - a detail that speaks to the depth of craft being passed down at Takefu Village. Mark has visited Japan five times and met Kamo-san personally. Shiro Kamo knives are among the most consistently popular on the site and among the most recommended on knife forums - a reputation built over years of real kitchen use rather than marketing.
