All Gihei Knives

Gihei has been producing knives in Sanjo City, Japan since 1928 - nearly a century of production from a father-and-son shop run today by Atsushi Hosokawa and his son. The shop built its reputation at CKTG on two steels: HAP40 and Blue #2. HAP40 is what CKTG calls Voodoo Steel - a powdered high-speed semi-stainless alloy at 65-66 HRC that holds an edge three to five times longer than traditional carbon or stainless. Blue #2 delivers reactive carbon performance with SUS 405 stainless cladding for practical daily maintenance. Oak octagonal urushi handles on the HAP40 line, magnolia on the Blue #2. Two steels, one shop, nearly 100 years of craft.
