Gihei Blue #2 Nashiji.The Gihei blacksmith shop opened for business in 1928. Under the leadership of owner Atsushi Hosokawa they have been producing some of the finest Japanese kitchen cutlery using great steels and cutting edge techniques. Hosokawa-san is known to be an expert in the field of new age steels, and he makes the ZDP189 knives for our Richmond brand. With this line, however, he has embraced the ubiquitous and very popular Hitachi Blue Paper Steel #2. The grind on these blades is exceptional. The heat treatment is equally impressive. He takes the steel to 62-63HRC. The inner core is then wrapped in SUS 405 stainless steel to add lightness and strength to the Blue #2 core. It is finished with a lovely pear skin (nashiji) look above the primary bevel. We think this is very well made and finished line of kitchen knives at a very attractive price point.
