Gihei Blue #2 Petty 150mm

This is another great knife from the house of Gihei. Made with a core of Blue #2 steel, the blade is clad with a layer of SUS405, a softer stainless steel. This is a san-mai style blade, meaning that the cladding covers both sides of the core steel but does not wrap over the top. The outer layer, or jigane, then receives a great looking pear skin finish, known as Nashiji in Japan.

We are particularly fond of the quality of grinds inherent in Gihei knives, and this one is no exception. It has a symmetrical 50/50 edge profile, which makes it a good choice for both left and right handed users. Likewise, the heat treating of these blades is exceptional, another trait common to Gihei knives.

Considering its price point, fit and finish are of a high standard indeed. Many petty knives of this size feature very slim blades and thin tips, this one has more height to it from heel to tip. It resembles a very small gyuto rather than a small slicer.

This fine blade comes coupled to a traditional oval handle made from Ho wood and buffalo horn.

    Had this for over 2 1/2 years now and it lives on my mag strip. Its just the right size for so many jobs and not too big and scary for my wife to use. The tip is tapered nicely so you can do fine work and the height is tall enough to actually do some chopping. The front has a small flat spot and you can do some chopping with it as well. Edge retention is great!

    This knife looked interesting and i wanted a Blue steel blade to check out. Fit and finish were very good although you may want to seal the handle with some of your favorite finish.Grind is pretty nice also. This is a fairly tall petty and i see it more as a mini Gyuto than a petty. After cutting some onions and citrus i got a little color on the edge but I would says it wasnt that reactive. Its tall enough with a nice flat spot that you can actually do some chopping. The edge retention so far seems to be holding. Overall its a nice alternative for those not wanting to use larger knives or a Santoku..
