This is Yoshimitsu’s line of knives made from the ever popular Hitachi Blue Paper #2 steel. Also known as Aogami 2, Blue #2 is well loved for it’s versatility and general abilities. Great edge retention, ease of sharpening and durability are it’s main attributes. The Yoshimitsu blacksmiths harden the inner core to 61-62 Rockwell. They clad the hagane (inner core) with a soft stainless steel to aid with protection and add strength. These are really well made knives with great fit and finish and super performance. We think these are a very well made and well priced example of the art of Japanese kitchen knife making.
