Combination Stones
Combination stones pair two grits in a single stone - typically a coarser side for setting or repairing an edge and a finer side for refining and finishing. They are an economical starting point for sharpening and a practical option for cooks who sharpen infrequently and want everything in one piece. The tradeoff compared to dedicated single-grit stones is versatility over specialization: combination stones cover the full sharpening session but the individual grits are often softer and more general-purpose than what dedicated stones at the same grit level offer. For most home cooks, that is a very reasonable tradeoff.
