Kohetsu loosely translates to "be happy" - and the SLD line delivers on that with a combination that is hard to find at this price: semi-stainless SLD tool steel at 61-62 HRC, a stamped lattice finish on the jigane that looks like it belongs on a much more expensive knife, and walnut octagonal handles with black pakka ferrules. SLD sits in a useful middle ground between reactive carbon and standard stainless - it sharpens like carbon, resists staining like semi-stainless, and holds an edge longer than most stainless steels at this hardness. Made in Sanjo City, Japan exclusively for CKTG.
The petty at 137mm fills the gap between a paring knife and a longer utility knife - useful for garlic, scallions, in-hand trimming, and smaller board tasks where a nakiri or gyuto would feel excessive. The hammered finish aids food release on grippy vegetables. Spine benefits from light rounding for extended use. Weight: 2.7 oz (78g). Blade height: 31mm. Spine: 3mm. Even double-bevel grind works equally well for right- and left-handed cooks. Stainless cladding over the SLD core keeps daily maintenance simple. CKTG is the only source for the Kohetsu SLD line.
What Customers Are Saying: Four five-star reviews. Reviewers praise enjoyable use and great food release. One experienced sharpener who had not previously regarded semi-stainless steels as serious cutters calls SLD an eye-opener - edge retention impressed him, and the hammered finish sheds well on grippy vegetables like potatoes. One reviewer bought SLD knives specifically for family use to protect more expensive carbon knives - and found himself reaching for them regularly. The spine benefits from light rounding for extended sessions.
Care Instructions: SLD is a semi-stainless tool steel - highly stain resistant under normal kitchen conditions. Hand wash and dry after each use. Avoid the dishwasher. The stainless cladding fully protects the flanks and the SLD core resists discoloration well, but drying after use is still good practice. Sharpen on quality water stones - SLD at 61-62 HRC sharpens easily and responds well to stropping. Use wood or rubber cutting boards. Avoid bones and frozen foods.

Wanted a petty to slot in between my 90mm paring and my longer 160+ mm nakiri, gyoto, bunka.Haven't been disappointed. The usual Kohetsu F and F, plus SLD - an eye-opener for me who had not regarded stainless steels as worthy cutters. Retains a good edge and is a nice size for smaller stuff like garlic, scallions. Hammered feature on blade sheds well on grippy veggies like potatoes, but has a tougher time on hard fruit (apples) because of its hefty blade thickness. I have other knives for that, however. A great addition to my knife inventory!

An Excellent Line of KnivesPosted By: J. Sewell - verified customer

I'm a big fan of the Kohetsu SLD line of knives. They take on an excellent, durable edge, once sharpened, and are very, very stain resistant.I'll admit, I bought the SLD knives for my family to use, and to keep them from damaging my more expensive carbon/reactive knives! But, I sure don't mind using them myself, because they're all a pleasure to use! In addition to this 130mm SLD Petty, I also own the 210mm SLD Gyuto, and the 170mm SLD Santoku.
