- verified customerI'm petite, so I was looking for a smaller all purpose knife than a gyuto. This one did the trick, it's the perfect size for all the veggie prep I do. I'm a home cook, so I used the sharpening service to get an angle on the blade and it was very worth it. Some dao vuo reviews note quality problems, but mine is well balanced, nice grind, and thin. I heard they provide better quality knives to some distributors, and maybe that's true because mine is in great shape.
I was ready to have to sand down the handle, but mine didn't need it. I just sealed the handle, and I forced a patina. After the patina, it sharpened fine and has held a really great edge for two weeks now. My now-retired line chef father in law is a fan for the price and my home cooking needs.
