With a stunning aesthetic, this santoku from Mr. Katsushige Anryu's Hammered lineup will stand out in any Japanese knife enthusiast's collection. The renowned edge taking and edge holding of the Hitachi Aogami #2 core, coupled with Mr. Anryu's high performance grind, make this knife every bit the performer on the cutting board as well. As a hand-produced knife, individual examples of these knives may vary dimensionally from one another. While wrapped in stainless steel for ease of maintenance, the carbon core of the knife will discolor with normal use and could rust if abused.

    As a regular home cook, this has been my primary knife for a month, and the quality overall is very impressive. Its sturdy yet lightweight, quite comfortable in hand to use. It doesn't feel like it will get damaged easily, and it was unscathed after I accidentally dropped it on the kitchen floor. I attempt to keep the knife dry after use, and I've had no issues with rust. The exposed carbon steel has developed a patina, of course, which makes for a cool look!

    I hone the edge on a ceramic rod once every 4-5 uses, and after one month, the edge seems as sharp as it was the day it arrived (sharpened by CKTG). The most outstanding part of the knife, in my view, is the superbly done convex grid, which aids immensely in food release and cutting denser food items. All in all, I believe this knife should serve as my go to knife for a long time.

    I love this knife.Got it about 10 days ago and ran it over a couple stones and a strop.She's absolutely deadly sharp now.

    This is a fantastic knife. Gorgeous to look at, razor sharp out of the box, and an absolute pleasure to use. There were a few little details about the fit and finish that could have been better (a bit of a drop off between the ferrule and handle, a bit of roughness on the neck where my pinchgrip goes) but these are all minor details. The blade is a touch heavier and sturdier than I was expecting (not a bad thing!) and the hammered finish was much more interesting and functional than I thought it would be. Overall this is a fantastic addition to my kitchen and I highly recommend it.

    Purchased the Anryu Blue #2 Santoku a few months ago and am very pleased with it in all respects. The hammered finish looks and performs wonderfully and food release is outstanding. OOTB edge was very good, excellent grind and easy to get this Aogami #2 steel to a screaming sharp edge (and keep it). This knife feels great in the hand~ light, nimble and great balance with a pinch grip. Fit and finish are excellent, though the knife I received had a couple rough spots on the spine, easily sanded out. Very nice handle and ferrule with great F and F, great value for a knife in this price range. I absolutely love this knife and highly recommend it ~ by far my favorite Santoku!!

    Balance is directly behind my index finger in a pinch grip, making for a slight handle heavy bias, and a blade that can change directions telekinetically. Out of the box sharpness on my copy was baby smooth arm shaving, can\'t tell I cut myself sharp.

    I have to say, if you are a home cook that maybe doesn\'t want to wade into the $225+ gyuto range, but want a J knife that looks almost as good as it performs don\'t bother continuing your search. Mine did paper thin hands free tomato slices out of the box.

    The fit and finish are great. The edge is super sharp out of the box. I love these knives, form and function. They look great and get crazy sharp. I also have the 75mm petty, 150mm petty, 165mm nakiri, 210mm gyuto, and 240mm gyuto.

    I purchased this knife as a gift for friend. I sharpened it and tested it out on a couple of onions and tomatoes. The knife is very light and nimble and showed good performance in the brief time I had it. Fit and finish were good and the handle is definitely way above average for a knife at this price.

    This is an excellent Santoku. The balance is perfect for a pinch grip, the handle is comfortable and the aesthetics are spot on. Blade performance is superb, every bit as sharp as Aogami blue super, but no where near as tedious to sharpen. An excellent knife at an excellent price.
