Matsubara knives are hand-forged in Omura City, Nagasaki, by Tanaka-san - a blacksmith with deep roots in traditional Japanese blade production. Lines span HAP40 semi-stainless, Ginsan Damascus, Blue #2 Nashiji, and more across walnut octagonal handles with buffalo horn ferrules. The Matsubara HAP40 line is one of the best introductions to powdered high-speed steel available at an accessible price.
