The Wavy Face finish on this line is a hand-hammered texture applied directly to the Blue #2 stainless-clad blade - not a machine-pressed pattern but a genuine hand-worked surface that gives each knife a slightly different character. The hammered texture reduces surface contact between blade and food, improving release on sticky vegetables and proteins. Katsuto Tanaka produces these at Tanaka Kama Kogyo in Omura City, Nagasaki Prefecture using Blue #2 carbon steel with a stainless cladding.
With a blade height of nearly 60mm, this is one of the tallest 210mm gyutos we carry. The extra height helps the knife power through large amounts of food through a long shift. The octagonal oak handle and even, double-bevel grind serve both right- and left-handed users well.

Care Instructions: Blue #2 is a reactive carbon steel - the stainless cladding protects the flanks, but the exposed carbon edge will patina naturally with use. Wipe and dry the blade immediately after every use. Avoid leaving acidic foods on the edge. Hand wash only, and never use the dishwasher. Apply camellia oil for long-term storage. Sharpen on quality water stones - Blue #2 at 62-63 HRC sharpens easily and rewards good technique. Strop regularly between sharpenings.

I am in love with this line of knives, I got the petty several months ago and it instantly became my favorite knife. When I saw this come in stock I had to have it, and I regret nothing. It has become my go to large chef's knife, the extra height is very noticeable and I'm shocked at how light it is even though it's such a big knife.

Pictures do not do this knife justice, it’s a stunner. Fit and finish is impeccable. The handle is nicely sealed against the tang. It’s a tall knife and the balance is perfectly centered for a pinch grip.
I paid for the finish sharpening service and Mark sharpened it razor sharp. The first thing I cut with the knife was some sweet potato. The knife glided through it with absolute ease.
I think this will make an excellent addition to anyone’s knife collection.
