This Yahiko knife brings all of those elements together in a refined, well-balanced tool that feels confident and controlled on the board, with a sleek profile that makes it easy to use for a wide range of prep tasks. The nashiji finish adds a soft, organic texture to the blade that pairs beautifully with the warm cherry wood handle.

The blade is forged using san mai construction with a core of Ginsan stainless steel, a premium Japanese stainless known for taking a very fine edge while remaining easy to sharpen and maintain. Ginsan offers excellent edge stability, good edge retention, and strong corrosion resistance without feeling brittle. The even 50/50 grind delivers a neutral, predictable cutting feel for both right- and left-handed users, while the hand engraving by Akane san and the elegant calligraphy on the Yahiko box elevate the knife beyond a simple tool into something special.

Care Instructions: Hand wash only and dry promptly after use. Do not place in the dishwasher or leave wet on the board. Store carefully to protect the edge and engraved details.

    Knife with excellent finish on the blade and handle. Very sharp from the factory and great appearance. The blade slices vegetables very well, with great precision!

    Kanji engraving is a little shallower than I think is depicted in photos and videos, but that could just be my knife. Clean and beautiful knife. Liked it so much I bought the matching petty.

    I’ve owned this knife for 4 years. I acquired the 240mm and it is the best culinary purchase I’ve made. There were some issues (on my part) with shipping, and Susan Brown worked with me to recieve my shipment back 22’. The customer service here is IMPECCABLE!

    The knife came razor sharp, literally, and I love the fit and finish. This knife punches WELL above its weight class and is one of the best value purchases on the site, in my humble opinion. As beautiful as this knife looks on video, it’s even better in person. You will not be disappointed!

    Clean Ginsanko steel, very lightweight, well balanced, and thin at the edge.

    Not quite a laser, but for the majority of people, this is as close as you will ever need.

    Extremely good value at this price point!

    Excellent value Kirisuke ! I wanted a 210 Kiri to fill in the size gap between my 180 Bunkas and 240 Konosuke Fujiyama and HD Kirisukes and the Yahiko is a great size for an all around blade . The quality of the knife is excellent . As Mark mentioned to me the Yahiko brand has the handle installed , engraved, QC and finished at Konosukes shop before it is shipped . The Ginsan steel blade sharpens easily like carbon steel and holds a screaming sharp edge and the Kiri tanto tip is great for detail work . Definitely a top quality “ bang for the buck “ knife
