This 130mm petty knife features a core of Aogami Super (AS) steel, heat treated to approximately 64–65 HRC. AS steel is prized for its ability to take an extremely refined, acute edge while maintaining excellent edge retention. Compared to many other carbon steels, it also offers improved corrosion resistance, making it both rewarding to sharpen and a pleasure to use in daily kitchen tasks.
The blade is clad in softer iron and finished with Moritaka’s signature kurouchi surface, giving the knife a rustic, workmanlike appearance that reflects the long traditions of the forge. The san mai construction provides strength and stability while allowing the hard core steel to perform at its best.
This version is fitted with a walnut octagonal handle, offering a warm, natural feel in hand and a comfortable, balanced grip. The handle is a standard production upgrade—not a custom handle—and pairs nicely with the traditional aesthetics of the blade.
