The Saji Rainbow Damascus kitchen knives are a stunning blend of form and function. The unique pattern is achieved through the use of rust-resistant stainless steel, brass, and copper layers on a Hitachi Blue paper #2 steel core in the san-mai style. Amazing knife not only is it beautiful, but it takes an edge quite easily. I took it on my Kangaroo leather with a micro spray when I got it and it is insanely sharp. It’s on the more expensive side but well worth it. It is perfectly balanced and the iron wood gives it a nice weight.
