The Moritaka bunka is a a new item for 2016. It's a nice general pupose knife that is small enough for easy control but also tall enough to be able to chop and push cut effectively. Moritaka hamono makes these knives for us using aogami super steel with a rockwell hardness of about 65. They take a very nice edge and hold it well. The handle is made of ho wood with a nice buffalo horn ferrule.
