The Kohetsu line of knives is perfect for the busy line cook or the discriminating home cook. They are a fantastic deal, manufactured exclusively for Chefknivestogo from top-of-the-line Hitachi Blue #2 steel. They feature excellent heat treatment and very nice grinds with a upgraded walnut octagonal handle with pakka wood ferrule. The stainless steel cladding on most of the knife will keep all but the mirror-finished edge from forming a patina. Kohetsu loosely translates to "be happy" in Japanese and we hope these knives will make you happy for years to come. Made in Japan exclusively for Chefknivestogo.

    I own several far more expensive knives including other carbon steel ones. I got this one to try out Blue#2 steel and CKTG knives as well. This knife is just a lot of FUN. It holds an edge and is just really cool looking. I can't say thank you enough to CKTG. All my sharpening supplies and stones came from here and I will buy more knives from here as well. Buy this knife, you'll love it.

    Bought this as a gift. Out of the box the finish on the blade and the script was very beautiful. Handle seemed too large for a 210 and I have large hands. Handle also had some discoloration. Weight was WAY off, specs say 5.6oz but it was 6.8oz on the scale, a big difference. 5.6 is that sweet spot but at 6.8 it felt heavy. Sharpness out of the box was not great but have used the steel before and have been impressed.

    I bought this knife a few months ago and got it rehandled with dyed tiger maple. It looked so much nicer. Very solid sturdy knife. I haven't used it much because my collection of knives is so vast but I can see it being a good workhorse knife and it looks nice while you use it.

    I been on the search for a new chef knife and I laid my eyes on this one and so far this knife is one the best knife I used at work from cutting vegetable to breaking down meats im very pleased.

    I've never laid my hands on a knife like this. OOTB sharpness was average, but after just a few minutes on some shapton stones, this thing was shaving the hair from my arm. Beautiful blade, beautiful handle, amazing F&F, and screaming sharp, what more could you ask for? I can't believe this is under two hundred bucks. Thanks Mark!

    Got it as my first chef knife, and I couldn't be happier with it. It feels amazing in the hand, very comfortable, very maneuverable, and incredibly sharp. After a few passes on a ceramic hone, the blade was hair shaving sharp

    very good value for the money. The fit and finish is so so, and its not to sharp otb. But, it takes a very sharp edge. The handle is also just okay, but the knife is only 130$. If you pay 300 plus for a knife the fit, finish otb sharpness, and handle will be much better. If your a chef on a budget this is the knife for you.
