Posted By: Nikitarecently impulse-bought this as I need wa handles on everything, however it performs extremely well as a bread knife, my old bread knife was the Tojiro ITK 270mm bread knife, and both knives now have been used for service in a very bust restaurant. the kohetsu knife holds up very well, with little flex in the blade and a general feeling of sturdiness. the blade itself is very thin, and nice and light so it doesn't strain my hand when slicing bread in large volumes, which was an issue that I had with the tojiro after ~10 loaves of bread.
