During a trip to Japan, Mark gave each of thirteen blacksmiths he met a personal request, and his request to Kanehide was a wa handled, laser ground version of their popular PS60 mono steel knife. This 240mm kiritsuke is one of the results, built around a steel that has a dominant share of the global razor blade market and shares much of its chemistry with AEB-L.
Kanehide hardens this PS60 steel to about 60 to 61 HRC through special heat treating, then follows that with a cryogenic treatment in liquid nitrogen at negative 180 degrees Celsius, converting retained austenite into martensite to boost both hardness and wear resistance. The result is a fully stainless knife that sharpens easily and cuts cleanly, finished with an octagonal oak handle in a burnt urushi finish. Our kiritsuke saya does not fit this knife. Try the blade guard instead.

I got my knife in wonderful condition, very sharp out of the package and looks exactly the way it’s shown/described. However, that’s not the main thing that stood out. My Saya got switched out because they had a Kiri Saya on the website by mistake, but they gave me the correct one in order to fulfill my order.
They sent me an email regarding the Saya but I just never saw it. I’m writing this review because I want people to know the lengths this company is willing to go to satisfy their customers. I’ll always recommend chefsknifetogo to future cooks/chefs

This would receive a 5 star rating if it wasn't as crooked as a sin. The blade looked to have scoliosis and it took a while to straighten but once straight, the out of the box edge was very nice, and after a session on the stones, it took a very keen edge. The blad geometry is great and it passed through potatoes and carrots easily but really shined on steak and chicken. Overall a great knife, even the handle and F&F were great. You can call it a budget knife since it isn't in the thousands like some customs but the performance is top tier.
