Tojiro DP knives are one of the best buys a professional or home cook could make when beginning to explore the work of Japanese cutlery. The extreme value found in this incredibly high performing line is unparalleled. Tojiro does an exceptional job with the stainless VG-10 core steel in the DP series. The knives are capable of taking an extremely sharp, refined edge while also exhibiting very good retention and durability characteristics. The softer stainless cladding around the core steel helps make Tojiro DP knives easy to sharpen with excellent structural integrity. Handles are done in a black stamina wood, which is constructed with the demands of a professional kitchen in mind (though it is also wonderful in a home environment). Fit and finish is high and blade geometry is superb. Over all these examples of performance Japanese cutlery offer one of the best bang for your buck out in the market today.

I bought this knife for my girlfriend after experiencing cutting onions with their horribly dull knives and being brought to tears (by the onions or the knives I couldn't tell). I already have the Tojiro DP 240mm and loved it and this knife provides the same experience. Workably sharp out of the box and the perfect size for my girlfriend with the right profile for pretty much any job in the kitchen. I would recommend this knife to any one.

I bought this santoku to fill the spot between my Shun Elite 6 serrated utility and Shun Elite 8 chef's, primarily for fruit and vegetables. It does that quite nicely. Recommended knife and knife purveyor. Lickety-split shipping!

Bought this as a gift for my son's mother-in-law (Marija), who admired her daughter's Masamoto santoku, gifted by me a few years ago. The Tojiro was decent sharp out of the box, but I tuned it up to 8K with Shapton stone on Edge Pro, plus leather strop. Will report back when my good friend and great cook Marija tells me how the Tojiro performs.

This knife is amazing for the money. I'm in love with Japanese knives now. I like my Tojiros much better than my previous set of -double the price- (Zwilling) Henckels. Highly recommended for the price range in Japanese Knives.
