The deba is the traditional Japanese knife for processing whole fish. This 180mm deba is handmade by third generation blacksmith Takeshi Saji using Ginsan stainless steel for the hagane and a soft stainless steel for the jigane. As this is an all stainless steel knife, upkeep during use is minimal. The hagane is hardened to 61-62 HRC coupling the keen edge taking of Ginsan steel with a touch of toughness. Debas are single bevel knives meaning they are ground on the right side only making them appropriate for right-handed use only. Single bevel knives also require a different sharpening procedure from more common double bevel knives. The oval shaped handles are made of ho wood with a buffalo horn ferrule. As with any handcrafted product each knife will be unique so buyers should expect some dimensional variation.
