The 165mm santoku is a true all-purpose kitchen knife, ideal for vegetables, proteins, and everyday prep. It features a flatter edge profile that excels at push cutting and clean, controlled slicing. I got this knife for my 20 year old daughter as she got a summer line cook job. I wanted to get her as close to a mini version as I could to my Takeda stainless clad AS chef knife. At first I was not overly impressed .. it was beautiful but performed ok. I subsequently took it to my Shapton whet stones and gave it a nice edge. Then a few weekends ago I was too lazy to get my large knife bag from the car and used this for a full meal prep. I find myself reaching for it all the time now.. it holds a great edge, nice tip for finer work and easy to maneuver as it is a small blade (at least for me. I am considering one for my knife bag now as I dont always need a 9 inch plus blade for every task .. did I mention how cool this knife looks? Great value for a stainless clad AS blade too
