Care Instructions: Aogami Super is a reactive carbon steel - the stainless cladding protects the flanks but the exposed carbon edge will patina naturally with use. Wipe and dry the blade immediately after every use. Avoid leaving acidic foods on the edge. Hand wash only, never dishwasher. Apply camellia oil for long-term storage. Sharpen on quality water stones - Aogami Super at high hardness rewards good sharpening technique and responds beautifully to stropping between sessions.

I got this knife for my 20 year old daughter as she got a summer line cook job. I wanted to get her as close to a mini version as I could to my Takeda stainless clad AS chef knife. At first I was not overly impressed .. it was beautiful but performed ok. I subsequently took it to my Shapton whet stones and gave it a nice edge. Then a few weekends ago I was too lazy to get my large knife bag from the car and used this for a full meal prep. I find myself reaching for it all the time now.. it holds a great edge, nice tip for finer work and easy to maneuver as it is a small blade (at least for me. I am considering one for my knife bag now as I dont always need a 9 inch plus blade for every task .. did I mention how cool this knife looks? Great value for a stainless clad AS blade too
