R-2 & SG2 Steel
SG2 and R2 are two names for the same steel — a powdered metallurgy stainless developed in Japan and widely regarded as one of the best materials available for high-end kitchen knives. The powder process creates an ultra-fine grain structure that allows for very acute edge angles and exceptional edge retention, typically at 62 to 64 HRC. Because it is stainless, it requires far less maintenance than carbon steels while still delivering elite cutting performance. Makers include Takamura, Ogata, Kurosaki, and Shibata.
