Nishida-san is a solo blacksmith working near Nagasaki in southern Japan and he's turning out very nice work. The polished series you see here are made with his favorite steel, Hitachi White #1 (also called white paper steel) steel and is clad and reinforced with a soft iron cladding. Because of this the blades are reactive and you need to dry them with a towel after washing. They come with a very nice oval-shaped, rosewood handle and black pakka wood ferrule. White #1 steel is revered for its excellent sharpening properties and Nishida-san heat treats these blades right at the sweet spot for this steel at 61 Rockwell.
