When the Masakage Yuki line was introduced it quickly garnered attention for its beautiful, elegant aesthetics. As more enthusiasts and pros put these knives to the test, their reputation grew for their performance. This 210mm gyuto couples Hitachi Shirogami #2 steel, reputed to take one of the keenest edges available in cutlery, with a uniquely thin grind resulting in a delicate, high performance edge. While Shirogami #2 is a carbon steel and will patina with use, upkeep is easy with stainless steel cladding. This particular knife is topped off with a gorgeous custom handle.

    This is my first Masakage. For reference, my go-to and absolutely favorite knife *ever* is a re-ground Shibata Kotetsu R2 210 coming in at 4.8 ounces. My own scale has this Masakage at 6.1 ounces vs 5.8 on the website. First...out of the box looks and fit and finish are just...fantastic. 11 out of 10. The handle is beefy and lengthy and balances the blade perfectly. White steel is my favorite to cut with and maintain and this knife feels very much like a smaller version of my Goko White 240mm Gyoto. Honestly, it feels exactly like my Goko...just smaller and more nimble. Blade sharpness out of the box was ridiculous. This is a GREAT GREAT knife. All that said...will it replace my daily driver Shibata? I have to say no. But don't let that one very personal preference keep you from buying one of these. You most definitely won't regret it.
