When I first received this knife, I must admit that I was a tiny bit worried. Visually, mostly, as the blade-to-handle ratio was wonky (standard Wa handle.) In use, though, it proved to be a non-issue. Out-of-box sharpness was respectable, and it has performed all the tasks expectedly, in all of the grips I've used it for. Food release leaves a little to be desired (but maybe I'm just spoiled with my Takeda.) Spine is a little thicker than I would like, but hasn't proven to be a big issue. Overall, impressed, but not blown away.

My first White Steel blade. Absolutely love it. My particular blade was 83 mm. The nashiji stainless cladding is something to behold. Such a gorgeous knife. I wish I had more of it, so I'll be picking up a gyuto in the Yuki line. It's that nice.The fit and finish is excellent. The blade aesthetics are my personal favorite. Red/Light colored handle is extremely appealing to me. The small amount of work I've done with it has been a pleasure. Edge OOTB was excellent. I did not order the sharpening service. I just balsa & leather stropped it and it shaves hair. Have only had it and used it about two weeks, but I want another.Thanks so much Mark & Sue.
