Makoto Kurosaki has recently been making some fine blades for us sharing time with his brother, Yu, in the new shop he established in Echizen. We are very pleased with the results of his maiden solo voyage. He combines some of the finest grinds we have recently seen with sterling materials and above average fit and finish. The price of the knives belies these qualities.

The inner core is fashioned from White paper #2 steel which is clad using the san-mai method of awase. This involves covering each side of the core steel but without wrapping the cladding over the spine. The outer layer is a soft stainless steel which features the carbon scale from the forging process. This is called a kurouchi finish, and it lends the blade a great rustic look while reducing food stiction.

With a blade length of about 210mm, these chef knives are a perfect tool for any kitchen. They can tackle just about any cutting, chopping, or slicing task. They have a reasonably tall blade height which will be appreciated by those who like extra finger to board clearance.

    I got this with a custom handle and is my second Makoto. The grinds are just so perfect and the cladding line is a work of art. The edge really does get scary sharp. Like my Masakage Yuki and it holds the edge very well.Like with his Ryusei line, I am very impressed. You can't beat the price for the F&F or durability for W#2. Simply beautiful.

    I donít know anything about these knives. The steel, what the heck Sanmai is, Rockwell hardness ratings. I donít geek out on sharpening so that you can slice paper. What I do know is how to cook and slice vegetables and this knife is an absolute joy to use. Besides being beautiful, it is balanced beautifully, maintains its edge, and makes me very happy when I reach for it when I begin to cook.

    I have yet to use a nicer knife than this yet. Everything about this knife is stunning the balance, handle, weight, and sharpness.

    Also the speedy delivery too the UK. Order it and receive it with in 3days.

    I've made my way through many lines of Japanese knives on this site, all of which have been worth the money. This is one of my favorite gyutos. It makes quick and easy work of dense vegetables and proteins and is a joy to handle. The custom handles are a nice touch and actually help with gripping the knife. I find I prefer a heavier blade for my bigger knives and this Makoto fits the bill. OOTB sharp and ready for service!
