Makoto Kurosaki has recently been making some fine blades for us sharing time with his brother, Yu, in the new shop he established in Echizen. We are very pleased with the results of his maiden solo voyage. He combines some of the finest grinds we have recently seen with sterling materials and above average fit and finish. The price of the knives belies these qualities.
The inner core is fashioned from White paper #2 steel which is clad using the san-mai method of awase. This involves covering each side of the core steel but without wrapping the cladding over the spine. The outer layer is a soft stainless steel which features the carbon scale from the forging process. This is called a kurouchi finish, and it lends the blade a great rustic look while reducing food stiction.
With a blade length of about 210mm, these chef knives are a perfect tool for any kitchen. They can tackle just about any cutting, chopping, or slicing task. They have a reasonably tall blade height which will be appreciated by those who like extra finger to board clearance.
