We are very pleased to add another new knife to our current line-up of great blades from young blacksmith Makoto Kurosaki. Makoto and his younger brother, Yu, originally apprenticed under notable blacksmith, Hiroshi Kato. Makoto still works for Kato-san part-time, but he now also shares time with his brother in a new shop he has established in Echizen.

This is the first blade we have received from him that has been constructed from Aogami Super high carbon steel. The blades of these new knives are made using the san-mai method of cladding. In this case, a softer stainless steel is used to encase the hard AS steel which protects it from damage and corrosion. The AS hagane is hardened to 62+ HRC which bestows the blade with the ability to take and hold a super sharp edge.

The stainless jigane is treated to a lovely nashiji finish which adds a stunning contrast to the beautifully exposed edge and shinogi line. The basic profile is standard gyuto in that the 48mm blade height is proportioned with the 215mm length. It is a compact design that is still able to take on most ingredients with control and dexterity. The good looks and ergonomics are further enhanced with a nicely finished rosewood and black pakka wood octagonal handle.
