This knife currently ranks supreme in cutting feel within my knife collection and I own a few. Light, nimble and very well balanced. Effortlessly cutting ingredients like no other. I have purchased many knives from CKTG and this is the best one yet. Knife is made by Ashi Hamono rebranded as Konosuke. I also own a 270mm Hitohira Ashi and they both sit at the top as my highest performing knives alongside my Yoshida HAP40. Get it! you won’t be disappointed.
