Top tier steel, beautiful craftsmanship, great performance, and a very competitive price point make this Kohetsu SLD 210mm gyuto an excellent option for anyone looking for first rate cutlery on a budget. SLD semi-stainless tool steel is well regarded for its great edge taking and edge holding properties. Hardened to 61-62 HRC, the SLD core steel balances acute bevel taking with a high level of toughness to weather tough kitchen tasks. The SLD core is wrapped in a stainless steel cladding. Since the core steel is very stain resistant and the cladding is stainless, discoloration is nonexistent during normal use.

A very unique lattice work aesthetic with a polished finish adorns the knife. Please note, the handle has been upgraded from the old one on the video to the new, nicer walnut octagonal handle shown in the photo with black pakka wood ferrule. It's a big upgrade in the look and feel of the knife. These are handcrafted knives so each one is unique and some variation should be expected.

    I bought this a couple of weeks before Thanksgiving for the express purpose of cutting hard root veggies, i.e. sweet potatoes. My thought was that the 4mm spine combined with the lattice finish would help with release and it did exactly that. This will be my goto knife for any hard veggie from now on since I use a lot of them in my home dishes.

    It is an outstanding knife when you want something that won't be prone to chipping.

    Really happy with this gyuto. Always looking for a good value and this is it. Descent edge OTB but a few strokes on my strop and presto a wicked edge. The lattice design on the blade is very unique. Everyone makes great comments about the design pattern. This is my 3rd Kohetsu SLD (bunka and petty as well). I just wish they would offer a bigger petty and a sujihiki. I would buy them in a heartbeat.

    My First, but not last, gyuto.. this knife really does most of the work. Sharp edge with a perfect weight and handle size. (I'm average size woman). I have a very nice knife collection but I find this has become my go-to knife. Very versatile. Love the way it can chop fresh herbs as well as tackle a cauliflower. I really love this knife and l find myself cooking more than ever because it makes the experience more enjoyable!

    The video was spot on this knife has a bit of weight but it isn't too heavy and out of the book its sharp but not a razor. Overall I'm loving it so far just need to sharpen it up and it'll be my line knife for sure!
