Sanjo City has a centuries-old tradition in hammer-forged metalwork - a city organized around the craft, where quality and consistency are built into the production culture rather than enforced from outside. The workshop that makes the Kohetsu SLD line for CKTG is undisclosed but top-tier, and the knives reflect that: excellent fit and finish, precise heat treatment, and a stamped lattice pattern on the jigane (outer cladding) that gives the line a visual identity unlike anything else at the price. SLD semi-stainless tool steel at 61-62 HRC. Made exclusively for CKTG.
The gyuto at 214mm is the most popular size in the SLD line - versatile, well-proportioned, and built around the distal taper and thin geometry that makes Kohetsu knives outperform their price. At 5.7 oz and 48mm blade height it handles the full range of daily prep tasks with ease. Weight: 5.7 oz (160g). Blade height: 48mm. Spine: 4mm. Even double-bevel grind works equally well for right- and left-handed cooks. Stainless cladding over the SLD core keeps daily maintenance simple. CKTG is the only source for the Kohetsu SLD line.
What Customers Are Saying: Nine five-star reviews. A professional cook sharpened the knife a few days after arrival and reports it holding a good edge through daily kitchen use. A three-time Kohetsu SLD buyer calls it great bang for the buck - a few strokes on the strop produces a wicked edge and the lattice design consistently draws compliments from anyone who sees it in the kitchen.
Care Instructions: SLD is a semi-stainless tool steel - highly stain resistant under normal kitchen conditions. Hand wash and dry after each use. Avoid the dishwasher. The stainless cladding fully protects the flanks and the SLD core resists discoloration well, but drying after use is still good practice. Sharpen on quality water stones - SLD at 61-62 HRC sharpens easily and responds well to stropping. Use wood or rubber cutting boards. Avoid bones and frozen foods.

I bought this knife 6 years ago, still holds up well if you know how to take care of it! Is there a saya cover that fits on this knife? thank you in advance!

Hi Josh, I’m glad to hear you’ve gotten 6 years of good use out of your knife. Unfortunately, that saya is too thin for this blade, so it will not be a good fit. I’d recommend using one of our black felt blade guards instead. It should protect the knife well and give you a little more room. Kind regards, Mark

So I have given the knife a run for its money and it has not disappointed! It slices, dices, and chops like nothing I have ever wielded. This knife had changed my cooking game and I have completely fallen back in love with cooking. As a home cook I had no idea what having a capable tool could add to my kitchen tasks but I realize now how much I lacked without a proper knife. I have not begun to learn to sharpen, but out of the box this knife is sharp and precise like nothing I have ever encountered. Could not be happier with my purchase and maybe worried about what I have gotten into!
Just as an aside, but CKTG has been instrumental in helping me in my knife journey and I cannot thank them enough for helping and answering all my questions.

This knife is my instant favorite with its unique lattice-like finish and phenomenal balance. It feels even lighter than it is because it's so balanced and doesn't strain you at all. I did learn that it will patina pretty quickly as it's a semi-stainless steel (perhaps influenced by my choice of foods I used immediately) but I couldn't be happier with this purchase. Great fit and finish, thanks again Mark for the recommendation!

I bought this a couple of weeks before Thanksgiving for the express purpose of cutting hard root veggies, i.e. sweet potatoes. My thought was that the 4mm spine combined with the lattice finish would help with release and it did exactly that. This will be my goto knife for any hard veggie from now on since I use a lot of them in my home dishes.
It is an outstanding knife when you want something that won't be prone to chipping.

Really happy with this gyuto. Always looking for a good value and this is it. Descent edge OTB but a few strokes on my strop and presto a wicked edge. The lattice design on the blade is very unique. Everyone makes great comments about the design pattern. This is my 3rd Kohetsu SLD (bunka and petty as well). I just wish they would offer a bigger petty and a sujihiki. I would buy them in a heartbeat.

My First, but not last, gyuto.. this knife really does most of the work. Sharp edge with a perfect weight and handle size. (I'm average size woman). I have a very nice knife collection but I find this has become my go-to knife. Very versatile. Love the way it can chop fresh herbs as well as tackle a cauliflower. I really love this knife and l find myself cooking more than ever because it makes the experience more enjoyable!

The video was spot on this knife has a bit of weight but it isn't too heavy and out of the book its sharp but not a razor. Overall I'm loving it so far just need to sharpen it up and it'll be my line knife for sure!
