This Konosuke HD2 gyuto is one of the most talked about lasers in the CKTG catalog, the blade other thin grinds tend to get measured against. The fit and finish are exemplary, as expected from Konosuke, but the real story is in the grind itself.

The core is HD2 semi stainless steel, hardened to about 61 HRC, with an ultra thin, subtly convex profile that drops through produce with very little resistance. The out of box edge earns the term razor sharp in the truest sense, and the whole knife is built around subtlety and simplicity rather than flash. Being semi stainless, HD2 is easier to care for than an equivalent high carbon steel, though it will still patina over time unless kept polished. This particular knife features a Khii laurel handle, sized and weighted to balance the blade well in hand.

Everything in the description is accurate - this knife is a beast. Flies through produce, the 240mm is perfect as the blade is lighter than you think it will be. Razor sharp out of the box. Pretty patina resistant, but will still take one if you let it. Great food release due to the fantastic grind. It is perfectly balanced with a proper pinch grip. Can't recommend it enough. It is a little pricey, but absolutely worth it. I'm a knife addict and I haven't purchased another since I got this about 2 years ago.

This knife is gorgeous. It feels great and has decent food release. It stained very quickly after some vegetable prep but it isn't unattractive and could easily be removed. It does not have a very big flat area so I wouldn't recommend it for pure push cutting, but if you're up for adding a bit of a rock and a glide to your cutting action, you're in for a good time.
