1 people found this review helpfulThis has become one of my most used knives in the kitchen. The HAP40 blade came very sharp OOB, and held that edge for a long time. It was easily brought back to sharp on a table jig using diamond and Shapton stones. This knife is that perfect size that allows use in hand as well as on the board. I use it for everything from trimming fat off pork and beef cuts to slicing lemons and taking apart chickens. I plan on buying several more of the Kohetsu HAP40 knives offered by CKTG, IMO this steel offers the best compromise of edge holding, toughness, and corrosion resistance.
