The Hinoura Tamashii gyuto is made from White Paper #2 carbon steel which is hardened to 62 HRC. This is a hard wearing carbon steel which is clad with a layer of a softer stainless steel to protect and strengthen the core. The stainless steel cladding is given a hammered kurouchi finish to further withstand wear and aid in food release. White, or Shirogami, 2 is quite similar to 1095 and White #1 steel but with extra carbon. This gives the blade a higher wear resistance than the other two alloys coupled with very good edge stability.

240mm gyutos are a mainstay in many kitchens for both home and professional cooks. It is the perfect size for processing almost any ingredient, but not too long to require an oversized work area. Hinoura-san has fashioned a blade with great visual and performance characteristics. The grind is thin and of a high standard. The rustic blade face is perfectly integrated into the bead blasted blade road. This then transforms into a really beautifully polished edge.

The lovely looking blade is attached to a Khii Studio ebony octagonal handle which is a perfect match for this blade. It is installed in the traditional manner with a machi, or gap, at the tang.

    For anyone who is thinking about purchasing this knife I would highly suggest it. I am a professional Chef and use my knives quite a bit. This knife held an edge longer then any in my small collection. There is little to no wedging and it glides through most produce with ease. The build of the knife is very sturdy so you will not be scared to cut any of the harder vegetables or fruits for example butternut squash. Hopefully this helps anyone who might be looking but cant decide between 2 different knives which is the problem i run in to every time I am ready to purchase another knife from chef knives to go.
