Hatsukokoro Kumokage Blue #2 Gyuto 210mm. Hatsukokoro's Kumokage ("cloud shadow") kitchen knives are manufactured by Tosa craftsmen using Blue #2 steel with a hardness rating of HRC 62+-. They feature a rustic kurouchi finish and Damascus cladding on the blade road with nice wenge and buffalo horn octagonal handles. Even grinds on these double bevel knives make them great for both right- and left-handed users.

I was looking for a 210mm knife for work, and choose this one because of the weight and height. Having never used this brand before I took a chance, and boy was I surprised. It arrived sharp but after a few swipes with the Edge Pro it was amazingly sharp. I have really enjoyed using it at work for light prep and garnish work. Great Knife and Excellent Value! Could not be happier!
